4 Ingredients or Less
Sometimes I just want something that will hold me but I don't have the time to prepare a time consuming meal. Enter the idea of "Four Ingredients or Less." Why? Because sometimes less is more right? The point is - what you put into your body matters, and simple ingredients can be more beneficial than a whole lot of ingredients. Adding pumpkin seeds (not pictured in photo, because I had already taken a bite before I thought to add pumpkin seeds) gives you a healthy dose of Omega 3 fats, zinc to support your immune system and magnesium to promote heart health.
So I threw together a nice lettuce wedge salad before I ran out the door to pick my kids up from school.
Lettuce Wedge Salad Recipe with pumpkins seeds
Ingredients
1 iceberg lettuce
1/2 fresh tomato
pumpkin seeds for extra Omega 3, magnesium and Zinc
any creamy simple ingredient homemade dressing you like (the only reason I used my own ranch in this photo is because it was already prepared otherwise it would have been an olive oil and lemon kind of salad)
salt &pepper to taste
Preparation
cut iceberg lettuce in half
dice half a tomato
top iceberg lettuce wedge with your favorite healthy homemade salad dressing
add diced tomatoes
sprinkle with pumpkin seeds and salt and pepper to taste
